You will need
2-3 Ripe Bananas
160g Dark Brown Sugar
2 Large Eggs
1 tsp Vanilla Extract
200g Plain Flour
2 1/2 tsp Baking Powder
1 tsp Salt
100g Dark Chocolate Chips
Preheat the oven to 170˚C. Grease and line the loaf tin with greaseproof paper.
Mash the bananas in a bowl and set aside.
Cream together the butter and sugar. Mix in the vanilla and eggs. Sift in the flour, baking powder and salt and mix until everything is combined.
Stir through the bananas and chocolate chips. Pour into the lined baking tin and bake for 45-50mins until risen and golden brown. Poke with a skewer, when it comes out clean the banana bread is done.
Leave to cool on a wire rack
Tip: I like to serve the slices grilled or heated in a microwave with a spread of butter
