Chocolate Chip Shortbread

250g Plain Flour

75g Caster Sugar

175g Cold Butter

100g Chocolate Chips


  1. Preheat the oven to 180˚degrees celsius. Line a baking tray with greaseproof paper.

  2. Mix together the flour and sugar, then rub the butter into the mixture until it becomes a breadcrumb consistency.

  3. Add the chocolate chips and mix with a wooden spoon until a dough is formed.

  4. Roll out the dough on a floured surface and cut into shapes. Arrange on the baking tray leaving space between each as they will spread slightly. Sprinkle with extra caster sugar.

  5. Bake for 20mins. You can neaten the edges while they are still slightly warm, then leave on a wire rack to cool.

Tip: I cut mine into triangles, but you can cut them into rounds, fingers or use cookie cutters
