Easy Mince Pies

You will need

12 case muffin tin

Rolling pin

Fluted pastry cutters


60g Cold butter, extra for greasing

340g Plain flour

110g Vegetable fat/Cookeen

400g Mincemeat

Splash of milk

Icing sugar to dust


  1. Preheat the oven to 200˚C. Lightly grease your muffin tin with butter or use cupcake cases.

  2. Mix the flour, fat and butter with your hands until it becomes crumbly, then add 6tbsp of water and mix to make a pastry.

  3. Roll out the dough on a floured surface to a thickness of 4mm. Use a fluted cookie cutter to cut 12 circles.

  4. Press the circles into each case/muffin tin space and fill with heaped teaspoons of mincemeat.

  5. Cut out 12 further circles with the fluted cutter or use a festive cutter like the star one I used.

  6. Using a pastry brush, brush the milk on top of the pies to glaze.

  7. Bake for 20mins, transfer to a wire rack to cool and then dust with icing sugar.

Serve with brandy butter and ice cream

Tip: Try not to handle the pastry too much as this causes the pastry to become tougher
