Kiwi Cake (Gluten & Lactose Free)

You will need:

20cm Cake Tin


125g Lactose Free Butter

3/4 Cup Caster Sugar

1 tsp Vanilla Essence

2 Eggs

1 1/4 Cup Self-Raising Gluten-Free Flour

1/2 Cup Desiccated Coconut (extra to decorate)

1/2 cup Lactose Free Milk

1 tbsp Lemon Juice

3 Kiwis

100g Icing Sugar


  1. Preheat the oven to 180˚C. Grease a cake tin and line with baking paper.

  2. In a bowl, cream together the sugar and butter. Add the eggs and vanilla essence.

  3. Sift in the flour and add the coconut, fold into the mixture.

  4. Add in the milk and lemon juice and mix.

  5. Add the mixture to the cake tin, arrange sliced kiwi on top.

  6. Bake for 35mins, or until the cake is cooked when tested with a skewer. Transfer to a wire rack to cool.

  7. In a bowl, add the icing sugar with a little bit of water to form a paste. Spread on top of the cooled cake to add more moisture and sweetness to the cake.

  8. Decorate with extra kiwi and desiccated coconut.
