Pillow Cloud Cookies


Plain Flour 196g

Cornflour 28g

Cream Cheese 112g

Butter 112g

Granulated Sugar 200g

1 Egg

1 tsp Vanilla Essence

1 tsp Almond Essence

1/2 tsp Baking Powder

Icing Sugar to dust


  1. Sift the flour and cornflour into a bowl twice, this aerates the flour.

  2. In a separate bowl, mix the butter and cream cheese together, add the sugar and cream the mixture together with an electric mixer.

  3. Mix in the egg then the almond and vanilla essences until well combined.

  4. Sift in the baking powder and gradually add the flour/cornflour mix.

  5. Set the dough in the fridge for at least one hour.

  6. Preheat the oven to 190˚C and grease and line two baking trays.

  7. As the dough is quite wet, flour your hands and roll about a tbsp amount of dough in your hands until it forms a sphere.

  8. Place the dough balls on the baking trays leaving space between each one.

  9. Bake for about 10mins, they are done when the bottom starts to look golden. Leave to cool before dusting with icing sugar to serve.

Tip: You can make these any flavour you want with different flours of essences to swap with the vanilla/almond
