200g Plain Flour
1 tsp Baking Powder
200g Caster Sugar
100g Pistachios (chopped in half)
50g Dark Chocolate Chips
2 Large Eggs
Zest of 1 Orange
1 tsp Vanilla Essence
Preheat the oven to 180˚C and line a baking tray.
Sift in the flour and baking powder into a bowl, add the sugar, chopped pistachios, cranberries, raisins and chocolate chips. Mix together.
In a separate bowl; beat the 2 eggs together, make a well in the mixture and add the eggs, orange zest and vanilla essence. Mix together to form a dough.
Half the dough and make two cylinders on the baking tray about 5cm wide, make sure that there is plenty of space between them.
Bake for 25 mins.
Leave to cool for about 5mins, when still slightly warm; cut diagonally into 2cm thick pieces.
Place them back onto the baking tray facing upwards and bake for another 3-5mins.
Tip: These are great with tea and coffee
